Common drinks questions

Which wine goes with steak?

Steak wants a red with enough tannin to cut through fat and protein. A Cabernet Sauvignon, Malbec, or Syrah suits a well-marbled cut; a leaner fillet works with a softer Merlot or a Rioja Reserva. If the steak comes with a pepper sauce, reach for Syrah — its own peppery note echoes the dish.

What is an IPA?

India Pale Ale is a hop-forward beer style, usually between 5% and 7% ABV. Hops give it bitterness and an aroma that swings from pine and resin in American IPAs to tropical fruit in hazier New England versions. The style grew out of heavily hopped pale ales shipped from Britain in the nineteenth century.

How do I make a Negroni?

Equal parts gin, Campari, and sweet vermouth — 30ml of each. Stir with ice for about 20 seconds, strain over a large cube in a rocks glass, and garnish with an orange peel. Swap the gin for prosecco and you have a Negroni Sbagliato; swap it for bourbon and it becomes a Boulevardier.

What can I drink if I'm not drinking alcohol?

Alcohol-free beer has improved sharply and now covers lager, IPA, and stout. For something closer to an aperitif, try a non-alcoholic bitter over ice with tonic, or a distilled non-alcoholic spirit with ginger ale. De-alcoholized sparkling wines work anywhere you would otherwise pour prosecco.
